"A majestic brioche semla cube"
2024 season review
21st January 2024
It looks an absolute work of art. The swirls of lamination like wood grain on every side of the cube. It's a challenging thing to eat given its size and shape. There's generous amounts of almond paste (made from valencia almonds of course) and cream but it wasn't possible for me to get all the way to the paste on first bite. Perhaps attacking a corner wasn't the best tactic?
Once in, the buttery brioche is wonderful. Soft on the inside and crispy on the outside. There's no cardamom in the brioche so the ground cardamom kernels in the paste have to do all the work.
The large bits of roasted (salted and caramelised?) nuts on top add a nice contrast.
It's a work of art, it's a special thing, but be prepared for a bit of carnage when eating this in public! I've got cream and crumbs on my fingers, face, nose and table 😂
I love the Socker Sucker boxes. Simple and elegant. Not quite tall enough to fit the brioche semla without flattering the lid a bit, but there was a nice "eat me!" greeting written inside.
This is the most expensive semla I've ever purchased, but with the amount of butter in the brioche I can understand why!
