This is definitely not your classic looking semla. A square lid, and a... I want to say cow-pat of cream but that doesn't do the cream justice, it looks like it should be loose and sloppy, but it's not and holds its shape well and is incredibly smooth. I'd left my semla in the box a little too long, so it had sweated slightly - but plus points for being an all paper box and no pointless plastic window. The almond paste was very good. Dark and chunky. One thing I really liked was the variation in size of the chopped almonds; from smallish bits to half-almond chunks. The bread though was difficult to work out. It not made with regular flour - I wondered if it was rye or something but it turns out it's a heritage flour called Öland flour. I could taste the cardamom, but there was more going on - a kind of citrus taste too. One of the most interesting semlas I've had this season. 58kr.
