The paste is made from two types of dried peas, salted caramel sauce, cardamom and caramelised pumpkin seeds. They don't mention it, but I think there's bergamot in there too - either way, it was a litte too flowery in taste for me and not sweet enough but a really interesting and impressive attempt at an almond-free almond paste!

The texture of the bun was great with noticeable hint of cardamom. The cream was nicely piped but didn't have much taste to it. Perhaps the memory of yesterday's excellent cream on @gamlaostberga's semla is living too strong in my memory? Every single bite had bun, paste and cream - which always gets a nod of approval.
