"Pale and underwhelming"
2026 season review
17th January 2026
At Nockeby bageri in the west of Stockholm they have both small and large semlor available. I had the large which was 178g and 9.5cm tall. The small was 89g, 6.5cm and 47kr.
The bun is very pale, and I would have baked them just a little longer. But it does have lots of good sized chunks of cardamom - in fact some of the kernals look like they are still whole. It bun was a bit dry and a little compact, but really did taste of cardamom! There's still a lingering taste a fair few minutes after finishing.
The almond paste is just almond paste (mandelmassa) and presumably not made by the bakery, but it has been topped with plenty of roughly chopped roasted almonds.
Given the standard set nowadays of the independent bakeries here in Stockholm, simple off-the-shelf almond paste no longer puts you in the top league.
The lid is round and untrimmed and the construction of the semlor was inconsistent.
On one, the cream was off-centre and the lid was stuck on the side. All in all the small semlor were much more attractive and consistent than the large ones.
I'm a little disappointed, for the price of 61kr I expected a more interesting experience, but each component of the semla was underwhelming - apart from the quantity of nuts and cardamom, both of which were there in abundance.
