"Queen of cream"

Purchased direct from the MR Cake bakery in Slakthusområdet with a warm welcome from Roy Fares himself.
It's a large 164g semla, 8cm wide and 10cm tall.
Lovely shape to the bun. Perfect skin. It's tall and rounded with visible cardamom. Neatly trimmed triangular lid. Deeply grooved twist of whipped cream. Visually, it's a semla Queen.
The almond paste is traditional, made with some ground almonds and icing sugar. It's nice and quite sweet. It has visible cardamom and some finely chopped almonds.
The bun surprised me. It was more "bready" and plain than I expected. My expectations were probably sky high as the recipe I use to bake my semlor buns is basically Roy's recipe and they come out fantastic. Me versus Roy 😂. They weren't as similar to mine as I'd expected! Is that the result of large batch commercial baking?
It's a good semla, traditional, with amples of cream, but the bun doesn't standout in the way I'd hoped for. Roy, we need to talk!
