Lilla Bagis

The reception from the bakery staff at Lilla Bagis in Bagarmossen is always warm and welcoming 😊.

This one was roughly 7cm in diameter, which is according to my scale a small semla, but it managed to get up to a whopping 9cm high! The things you can achieve with some cream and a tilted lid 😃.

The lid was roughly cut and not trimmed and shaped with just a touch of icing sugar.

The bun was very evenly baked bun with a lovely brown hue, but didn't have much height, only 3cm. What was surprising is that it appears to be completely lacking cardamom! On the positive side, It does though have a consistency that I like.

I think the cream is a little over whipped, but this didn't effect the taste just makes it look "grainy".

The almost paste is a bit caramel like and quite sweet. In it, there's a mixture of whole almonds, almond flakes and chopped almonds.

As both the cream and bun aren't sweet, the paste, along with the whole almonds, can carry the sweetness and works well.

All in all, I liked this semla. Just a puzzling absence of cardamom - a key component of this seasonal treat and this flaw is something that prevents it getting a rating any higher than 3.
