Another medium semla and instantly this strikes you as an attractive semla. A glorious flower of cream, piped with a large drop flower nozzle, and a round lid perched on top.

The bun has a slightly darker colour to the inside compared to many semlors. I'm going to guess that it's the quality of the (organic) flour. The semla is put together so that you can see both paste and nuts peeking out under the cream. The flower petals of the piped cream really help in that regard.

There are finely chopped roasted almonds in the paste. The paste is quite dark, and I'm guessing that they are possibly using brown sugar.

Vanilla seeds are clearly visible in the cream, and that vanilla - in what is perfectly whipped cream - gives it a soft, ice cream like, taste.

It's noticeably weak on cardamom though, which pulls the rating down a touch. I can see it in the bun but I'm struggling to find it by taste. The roasted almonds are what come through most.
