At 144g and 7.5cm by 7.5cm this is a medium semla

Lovely deep swirls of cream. The cream is actually about half the height of the semla, perhaps because the bun itself is quite squat.

No question about being able to see the almond paste before tucking in! It's visible all the way round.

The lid is darker than the bun, which is probably because they prepare the round lids separately so they are 'detached' from their batch.

The almond paste is light in colour, with finely chopped almonds. It's a little grainy and I can't decide if that's because of granulated sugar or almond flour or both! It's the best 'light' paste I've tasted this season.

There's something that's giving a hint of saltness, but I haven't worked out what. It's not the bun or cream and I don't think it's the paste - what's left?!

The bun is compact and fresh. There's cardamom present but I'd like a little more.

Generally everything has a good overall taste, but I'd like slightly less cream or slightly more bun. Probably on balance slightly more bun with more cardamom in it. At 50kr though this is great value compared similar quality semlor.
