"Swedish-level semla"

A evenly-baked golden-brown semla with a round lid on a flat round plate. The semlor is naturally lit. The swirl of cream spirals upwards anti-clockwise into the underneath of the lid. Under the cream, lots of roasted almonds are visible sat on top of the almond paste which is hardly visible because of the quantity of nuts.

The second season of semlor at Heppni. It's a 160g "goldilocks" medium-sized semla with a full covering of roasted salted nuts on top of the cream. 160g is what my semlor usually land on (60g bun, the rest split between filling and cream).

It's a lovely soft bun to the touch and super easy to reach all of the components on first bite. There's a proper freshly-ground cardamom kick. Mark, the baker behind the semlor, says they have used bread flour this year (it was plain flour last season) and I think it has made the bun even better.

Another change this season is a slightly different piping tip. This time, they're using a closed star tip and it creates a lovely well defined swirl of cream.

The proportions are excellent. Cream, bun and paste are all there in the right amounts. The roasted salted nuts are copious, and probably just slightly too many. Not too many because of the salt, but due to the amount of toasty flavour and extra crunch.

The paste is sweet, but not overly sweet, with a few bits of cardamom mixed in there too. It's a nice dark brown colour with a nice texture.

All in all, a perfectly sized Semla with excellent proportions. A Swedish-level semla in England. £6.50, which is 79kr at today's exchange rate.
