"Semlor in York!"

Flori is a small batch bakery owned and run by head baker Lotte. There isn't a direct connection to Sweden, but Lotte worked with a Swedish baker during her time in Lisbon. Oh, and of course there's a few Swedish customers ๐. I've been supporting Flori since the first days as a startup in a container at Spark in York, and the Swedish style cinnamon buns and "cardy buns" have been a core offering since the start.
So, It's a semlor in the UK, which makes it an "udda fรฅgel" (odd one out) and why I'm giving it two different ratings. From a UK context, wow. 4/5. It's a special bun and it sells out quickly. From a Swedish and Stockholm context, it's a good 3/5 and cost ยฃ4.50.
The semla has a round lid with a generous covering of icing sugar. Plenty of visible chopped almonds. Looks gorgeous. The bun is lovely and fresh, and in true Flori style it's not small ๐ with plenty of cardamom. The cream has a sprinkling of nuts and sits in a rough swirl underneath. The almond paste through is towards the marzipan end of the scale and quite thick.
All in all it was really enjoyable, and I'm so pleased to have managed to be here when they've available ๐ and with a little tweaking of the paste and this would be a "Stockholm 4".
