"Archipelago semla"

2024 season review

4th February 2024

Rating: 3/5

Size medium Price 52 kr

I drove out to Gustavsberg and collected a semla from Bådan Café & Konditori which is inside the Artipelag art museum in the Stockholm archipelago.

The swirl of cream looks gorgeous! Thick and smooth, one big single swirl piped with a large star nozzle.

It's an 8cm "large" semla, which is a medium on my scale, but they only do a large and a small so it makes sense. It's 8.5cm tall with a triangular lid.

There is a hint of cognac in the almond paste (which I've learnt is Grönstedts VS), which I like. Finely ground almonds. I only noticed 2 bits of coarsely chopped or roughly chopped almonds (strangely few?) so there wasn't much crunch to it. But there was plenty of paste, so almost every bite of the bun contained the essential trio of cream, bun & almond paste.

The bun itself was a little dry and under-spiced with cardamom. Most of the cardamom taste actually comes through after, rather than during, eating.

A nice semla in lovely surroundings, but it was 52kr plus parking, plus Skurubron road tolls!
